BLACK PORK CURRY WITH POL ROTI


Hi Everyone! welcome to Food Heaven. It's start of journey to explore unique food recipes around the world & here we start with Locals favorite food recipe which mouth watering only after hear the name of this combo " BLACK PORK CURRY WITH COCONUT ROTI "


When we looks around the country pork dishes has it's own rich fan base because of the rich flavours  & aroma of the dish.This meal most suitable for Dinner table,Highly recommend for family gatherings & special occasions for relive the moment of happiness. well here is the recipe to mouth watering food combo.

INGREDIENTS 
  • 1.5 lb pork lion chop or shoulder, ( a pork cut with some fat is preferable for this curry )

MARINADE INGREDIENTS
  • 4 table spoon of black paper
  • 6 cardamom pods seed crushed
  • 1 heaped teaspoon of  Sri Lankan roasted curry powder
  • 1/2 table spoon of salt
  • 1/4 table spoon of ground cinnamon
  • 1/2 table spoon of cayenne pepper
  • 3 tea spoon of tamarind

CURRY INGREDIENTS
  • 2 jalapeno papers sliced
  • 1 inch of peeled ginger minced
  • 3 garlic cloves minced
  • 1/2 medium onion chopped finely
  • 1 tea spoon of lemon juice
  • 2-3 bay leaves
  • 1 tea spoon of sugar
INSTRUCTIONS
  1. Cut the pork into 1/2 inch cubes, if the pork chops have some bones you can add those to the curry as well as it will bring more flavours 
  2. Crush the cardamom pod seeds into a powder & mix it with the black pepper,salt,curry- powder,cinnamon,cayenne pepper. next crush & mix all of these together
  3. Add 2 Tbsp of this spice mix,the tamarind paste & 1 Tbsp of oil too. the cut pork & mix to coat, Leave to marinate for few hours ( up to 8 hours / overnight )
  4.  The next day bring the meat to room temperature before cooking
  5. Heat 2 Tbsp of oil in a saucepan over medium heat. when the oil is hot, add the bay leaves & ginger, onion saute till the onions become translucent. add the garlic,sliced jalapeno pepper & saute for another 30 seconds 
  6. Add the marinated pork & sugar mix  together, add about 1/2 cup of water & boil firmly.
  7. Lower the heat to medium-low & let it simmer for 1 hour, check on the curry & add extra water if it dries out.
  8. Taste & add more salt , lemon juice if needed.
  9. Your Tasty black pork curry ready to serve will go to the Coconut Roti recipe & enjoy this amazing meal. 



"SRILANKAN COCONUT ROTI"



Sri Lankan coconut roti a rustic flatbread  made up from flour, grated coconut with diced green chilies & onions for extra texture

INGREDIENTS 
  • Ingredients mention below use standard measuring cups & spoons
  • 2 cups of flour
  • 1 table spoon of salt
  • 1 cup grated coconut 
  • 1-2 sliced onion
  • 1-2 finely sliced green chilies
  • 1 tea spoon of red chili flakes 
  • 1/2 cup of water
  • oil as needed
INSTRUCTION 
  • Shift flour ( 2 cups ) with salt.
  • Add the grated coconut, onion, finely sliced green chilies & red chili flakes.
  • One thing to keep in mind is taste & texture of the coconut roti will change depending on how much spread coconut to flour you add.
  • The more scraped you add ( may be 1/2 cup more ) the milkier & softer the pol roti turn out.
  • At the same time too much scraped coconut & you will find it difficult to flatten them so make sure  you balance the ratio of flour & scraped coconut to make coconut roti.
  • Incorporate the ingredient into the flour thoroughly while mixing season with salt if necessary.
  • Gradually add water to form a sticky dough.
  • Continue kneading & form a soft dough that leaves the side of the bowl. this should take less than 5 minute.
  • If you add too much water to dough still be sticky even after kneading for few minutes, if this should happen sprinkle flour over the dough & knead until you get the dough that is smooth & doesn't stick to the edges of the bowl or in your hand.
  • Apply oil into your hand & transfer the oil into dough.On a lightly Oil surface shape the dough into circle.
  • Too much oil on the surface of the roti while you shape them & you might not be able to remove it from the flat surface on to the pan without breaking it into two 
  • If this should happen dust a bit of flour ease the removal of the roti.
  • Form roti that is not too thin as well or else they will break.
  • Lightly oil the pan & place roti to cook
  • While keeping an eye on the skillet you can form the other rotties.
  • Cook one side of the roti 2-3 minutes & flip over the other side.
  • Once all the roties has been cook serve with the previously prepared Black Pork Curry.
